Chester students learn culinary skills from Carol's Café owner

This September, a group of nine Plumas Charter students in Chester are getting a rare opportunity to learn from one of the region’s most beloved restaurateurs. Carol Franchetti, the seasoned owner of Carol's Café in Prattville, is sharing the wisdom earned from 53 years of owning a restaurant in a newly launched career technical education (CTE) course.

Running on Mondays throughout September and scheduled to return in May, the class offers students hands-on experience in the culinary arts. Franchetti, known for her mouth-watering recipes and the cozy charm of her café, is guiding students through the essentials of running a seasonal restaurant, imparting the secret behind her famous dishes and offering insights into the business side of hospitality.

The course isn’t just about cooking; students will also engage in community service as part of their learning. They are required to volunteer at the Almanor Basin Food Pantry and assist at one of Chester's community dinners adding a meaningful layer of experience to their education.

To cap off the fall session of the class, students will host a special event at the end of September, where they will prepare and serve a meal for their family members, showcasing the skills they’ve developed under Franchetti’s mentorship.

This blend of practical knowledge, community involvement and a rich culinary tradition makes the course an invaluable experience for Chester’s budding chefs and future business owners.
