Plumas Charter School’s Chester Learning Center students recently wrapped up their hands-on culinary course with a celebratory brunch, marking the culmination of weeks spent learning the art of cooking, hospitality and teamwork under the guidance of local restaurant owner Carol Franchetti of Carol’s Prattville Café.
In their final project, students planned, prepared and served a complete meal to family members, friends, and attendees of a nearby AA retreat—an authentic restaurant-style experience that put their skills to the test in a real-world setting.
This collaboration between PCS and Carol’s Café began in 2024 as a way to introduce students to career technical education (CTE) pathways in the hospitality industry. Franchetti, known for her beloved café on the shores of Lake Almanor, has continued to mentor students through every step of the process—from meal planning and food safety to kitchen management and customer service.
“Programs like this give our students a chance to experience learning beyond the classroom,” said CLC site coordinator Keri Reed. “They gain confidence, practical life skills and an understanding of what it takes to run a successful local business.”
